The X-ray diffraction patterns recorded at regular intervals during the production of enzyme along with determination of biomass, glucoamylase activity, total soluble sugars and proteins am described. Various parameters for monitoring the production of enzyme by X-ray diffraction are given and a mechanism has been proposed. The results clearly indicate that the starch used as substrate undergoes structural changes during the enzyme production. The areas under the X-ray diffraction curve and peak height decrease as the enzyme production increases till the rate of production reaches a peak. However, thereafter there is a reversal of the pattern in the X-ray parameters.
